Nice, Stanley! Trying a vegetarian diet is an awesome EcoChallenge. If you like trying new recipes from cookbooks, I'd highly recommend anything by Colleen Patrick-Goudreau. Yum yum. Her book, The Vegan Table, changed the way I eat.

I am excited about this Ecochallenge. This year I will adopt a diet free of animal products, enjoy at least 2 meal(s) cooked with organic ingredients per day, advocate(Matt Mylet) for local and/or organic food options at work or on campus, and finally I will watch a documentary film about food with family and friends and talk about what we learned. This is going to be a fun experience that will be documented through many different feeds. Follow me on IG @carpenterstanley and twitter @stanleycarpente.
