In those weeks, there were ups and downs and happy successful moments. I was surprised to see how much attention it took to do a seemingly simple thing like not let the water run while I was brushing my teeth! -

Here are some of my mostly local organic favorites:- honeycrip apples with dates & cranberries, chopped & baked with no sugar
- swiss chard- chiffonade and microwave with chimichurri sauce (homemade)
- miso soup base (homemade) with added chanterelle mushrooms & green onions
- leeks, peppers, (both from my garden) sauteed add cooked red beans
- quinoa (blonde kind) cooked with grated apple, add tablespoon maple syrup

Linda Haworth 10/26/2016 10:13 AMLatest non-dairy pesto recipe- tons of basil with pecans, garlic, avocado oil, lemon, salt/pepper all in the food processor. This is great addition to veggies, too!-

I have found it hard to add anything to my schedule that this time of year (already full of yard & roof maintenance before winter).. On the good side, I have kept up with the new recipe everyday most of which used local organic foods!-

Linda Haworth 10/24/2016 5:05 PMSo I am successful 95% of the time! It is the animal free food that throws me, but I am alright with 95% less dairy and eggs consumed.. If someone uses 2 eggs in a cookie recipe, then eating one of 3 dozen cookies in the batch equals .05 % of the egg. Back to my first sentence, then, I am pleased with being able to cut down on animal products by a very large percentage. Just being aware of what is in all my daily food and cutting 95% to me is a significant advance!-
Jennifer Nelson 10/26/2016 4:20 PMI have always found it challenging to avoid meat at potlucks or dinner parties too... naturally, you want to share and show appreciation! Did you know that you can substitute the same amount of applesauce or mashed banana for for the eggs in most cookies? The butter can be more tricky depending on the texture and flavor you are after (although I really like coconut oil shortbread myself).

Several new recipes: Chanterelle mushrooms on toast (NY Times), Spiralized zucchini with Trader Joe's Samba Matah Indonesian salsa, and spaghetti squash with marinara sauce. Three days, three new recipes-

Linda Haworth 9/29/2016 11:16 AMToday I am adding the challenge of not to let the water run while I brush my teeth! I once saw a PNWCA artist's moving performance piece about the high percentage of the world's women & children who have to walk MANY MILES each day just to get water for their basic needs. The presentation showed how just the act of not running the water when not in use would save amazing annual amounts of clean water. Seems simple, yet I have not focused on actually doing it successfully! ...............until now!-

My challenge is of ecological importance, yet, it is to my personal advantage health-wise! Since I joined Kaiser's Vegan program, I have lost 15 pounds plus lowered my blood pressure and my cholesterol count. Though positive, I have a long way to go; I will enjoy using this challenge/goal to be more observant in my animal -free diet and eating meatless meals! While I am on a good path, a two week hyper-focus will help me keep on track.-
