    To continue to eat this way, which is feeling really healthy to both my husband and myself, takes planning, shopping and meal prep.  We need to get more organized.  We've been depending on leftovers to get us through.

    The challenge is going well.  I'm surprised I am not missing meat.  I kind of miss cheese, although there are some non-dairy alternatives that are quite good.

    Planned meals and shopped to provide ingredients for whole food, plant based eating for all meals the entire week.

    Forks Over Knives Recipe book has been purchased.  Purchase of basic foods to have on hand as well as meal planning will occur very soon.  Currently we are eating up the foods that don't coincide with the whole food plant-based diet.
