Coral Avery 10/25/2016 11:14 PMComing to the end of the challenge, I realize I Was certainly ambitious with the number I chose, but feel like even though I couldn't achieve them all daily, it still made me do more to live more healthy and sustainably. I've been cooking with more fruits, veggies, and bulk items to cut waste - all of which are habits I'm certainly keeping after this project. -
Coral Avery 10/18/2016 12:29 PMI'm loving this challenge so far, but traveling all weekend made one of my actions too difficult to achieve.
The one that has been most difficult is definitely eating a meal a day without processed foods. Visiting friends in Seattle, we ate out at restaurants several times. In an attempt to stick with the challenge, we went to a farmers market to get fresh local organic fruit, but ended up making crepes with them - so the whipped cream and crepe pancakes were processed. When I eat at home I often have rice or pasta with whatever vegetables I cook so cutting them out of my diet has been a struggle, mostly because it is time consuming to prepare things I'm not used to cooking.-
