    Finding ways to cook veggies I'm less than enthusiastic about-have learned to disguise kale in smoothies, soups, snacks, and sauces.

    This was a great way to push myself to try new foods and cook more. Also found vegetarian meals that I would actually choose to eat as part of my everyday menu.

    Who knew there were so many ways to make oatmeal?  Am enjoying savory versions as well as sweet..EZ Orchards has been a good source of inspiration...

    Any suggestions of what to do with veggie waste (tops, peels, etc) besides adding them to smoothies or cake/bread batter?

      • Compost.
      • Planting anything from the root vegetable family? It could even be as an ornamental in some cases - in a clear glass roots can be very pretty. 
      • Find a neighbor with a guinea pig or chickens.
      • Here is a list of five vegetable tops that you can eat (beets, carrots, radish, celery root, and turnips.)

    So far, I've been able to cook and eat a vegetarian meal every day- also eating veggies I've never cooked before (jicama, fennel, jerusalem artichoke, parsnips). Not as hard as I thought it would be.
