    There were some days that it was hard to meet the 3 meatless meals. Specifically the weekend. During the week I meal prep my lunch and breakfast on Sunday evening and so I didn't even have to think about eating meatless meals. I usually have a light dinner that doesn't involve meet anyway. This weekend I had Army Reserve duty and ate out at lunch. I actually forgot about the challenge and was half way done with my yummy teriyaki chicken before I remembered. It was worth it. So amazing.
