Kim Thompson 10/26/2016 9:15 AMThe hardest challenge has been not eating meat for two meals a day. I thought it would be a lot easier since I already don't eat meat at breakfast, but the limited choices in Whitney make it tough. However, it does make me think about the impact that the livestock industry has on the environment, and I've been trying a lot more of the vegetarian dishes I usually pass over.
