Virginia Vu 10/24/2016 10:05 PMHad quiche and beef stew today, I think that was all. Kind of anemic lately so need to either eat some meat or find some iron pills. Sometimes you just need to find the balance between your health and eating healthy. -
Virginia Vu 10/23/2016 11:32 PMAte toast, vegetarian curry, and a lot of cheese plus a small quantity of processed meats. Don't think I can be a full-time vegetarian anytime soon, but not really minding the lack of meat in my lifestyle right now. -

I baked a big quiche last night, so I've just been eating that today along with fruit and some trail mix. -
Virginia Vu 10/22/2016 6:25 AMForgot to post yesterday, and the day before! I've been sticking to my meal plan pretty well, on the day I planned leftovers I simply replaced it with another day, as I realized I wouldn't even be home to eat it anyways. Yesterday I did eat out for lunch, but it was a vegetarian meal. Wednesday 2/3 of my meals were vegetarian, and yesterday 3/3 of my meals were vegetarian!
Walks continue to happen everyday, whether they be long or short. Rather stressed of late so the walks really help. -
Virginia Vu 10/19/2016 9:47 PMAte toast, tofu and rice, quesadillas, and a scone. Put leftovers on my meal plan for tomorrow, but I don't think I have any leftovers... Will need to adjust my plans.
Took a quick walk before class today, helped to bide time by until traffic cleared up a bit. Yay for quicker travel time and saving gas. -
Virginia Vu 10/18/2016 11:44 PMMade a meal plan and only at one meat dish today (toast, chicken n rice, tofu n rice, guac n chips, and scones). Less trips to the grocery store + less meat means more fuel saved and less carbon emitted.
Almost didn't go on a walk today, but decided to run out real quick before dinner. -
Virginia Vu 10/17/2016 9:51 PMHad toast, bun rieu, fruit and mien. Though not a lot, meat was involved in 2 of those dishes. So much for meatless Monday, better luck tomorrow.
Today's walk was particularly nice, didn't rain on me and the weather actually felt kind of warm. -
Virginia Vu 10/16/2016 10:03 PMToday I ate leftover chicken curry and banh bao, fruits, cake and something else that has slipped my mind. Was going to do some baking as part of meal prep, but couldn't find yeast. Iknow I have some so no need to buy any, but it'll just have to wait for another day.
Today's walk was nice, was stuck inside all day so going out for a breather was very refreshing. -
Virginia Vu 10/15/2016 10:01 PMAte mangoes, chips, chicken curry+bread and some cake. Also tea throughout the day. I kind of only had one solid meal today, as I was kind of busy and am having a low appetite as of late. Took my dog on a nice walk today with friends which was nice.
Still working on the meal plan. My fridge is pretty full right now, so I am going to try just eating whatever is in there without any trips to the store. Looking to do some baking/cooking this weekend. -
Virginia Vu 10/14/2016 6:31 PMGoing to treat this as an informal food diary. Yesterday I ate, toast, a salad and a a dinner time snack which had pork in it. Today was cereal, cheese quesadillas and salmon spring rolls. Doing pretty good so far, but foreseeing a problem where I might end up eating less complete meals vs something with meat in it.
