    My meatless meal today was pesto tortellini. It's probably my favorite meatless lunch option. I won't be at work for the next few days, so I think I will try for two meatless meals each day since I'll have more time to cook for myself.

    I had a meatless breakfast this morning because I know that my friend and I will probably be hitting the drive thru on our way up to Canada. We'll be in Vancouver for the weekend, and I already have the name of a vegetarian/vegan Middle Eastern restaurant that's only a 10 minute bus ride from where we're staying!

    This one is easy on weekdays as I usually skip breakfast or have something light like toast, and I sometimes like a vegan lunch from a place like Freshii or Veggie Grill.  It's weekends where this is challenging.  I love nothing more than a heaping plate full of bacon and eggs on a weekend morning.  Going to really make an effort this weekend to have a meat-free lunch on Saturday and Sunday.

    Both breakfast and lunch today were meatless! My Pad Thai noodles at lunch were even vegan! Not sure what I'll have for dinner yet, but perhaps it will be meatless as well.

    I did it again with breakfast! A giant croissant and a banana and some strawberries got me through the morning. I'm eating dinner with my family tomorrow, so I know breakfast and/or lunch will have to be meatless!

    I managed to have a meatless lunch on Saturday, but I didn't reach my goal Sunday. I was out most of the day, so I only had two meals, both of which were at restaurants I had never been to. Going meatless is hard when I'm not supposed to have soy products, including tofu, and I'm lactose intolerant! Today was easy, though: breakfast was waffles with almond butter!

    I haven't bought anything yet, so I haven't been able to refuse a disposal bag. Also I haven't started de-cluttering yet, but plan to get rid of some stuff this week.

    I totally forgot that today was the first day of the EcoChallenge, but I thankfully had cereal and some tangerines for breakfast! I'm aiming for a meatless brunch tomorrow, which will be hard given my love of breakfast sausage and corned beef hash.
