    I tried eggplant the other day. It was cut up and sautéed with tomatoes, squash and onions. Not too bad : )

    I'm getting my daughter involved in the challenge. She has a school assignment to track a personal fitness program for Oct and Nov. We'll be walking outside together, exploring hiking trails and doing yoga.
