Lori Davidson 10/23/2016 7:16 PMMy challenge is to eat no more than one meal with meat daily. I am not a big meat eater to begin with so I'm using these weeks to be more mindful of planning meals that don't contain meat. I've been curious about tempeh, so I made this yesterday:. http://cooking.nytimes.com/recipes/1015028-tempeh-and-wild-mushroom-fricassee . It was pretty good, but I think I need to learn how to work with tempeh before I serve it to someone other than me. ;) -

Lori Davidson 10/18/2016 4:43 PMThe rains have set in and at 3pm I gazed fondly at a few ripe red roasting peppers and the last couple of pounds of mostly ripe tomatoes on the counter. Roasted Tomato and Red Pepper soup to the rescue. That was a nice way to pay an homage to the summer and the season. I'm already planning next years plantings. -
Lori Davidson 10/18/2016 4:37 PMToday was a day of planes and automobiles. Once again, skipped the big spread and went for a yogurt and coffee. There were lots of choices in the airport for chicken, fish or veg - and the airplane meal was a salad. Even though I had less control of what I could eat, I still made the challenge. -
Lori Davidson 10/18/2016 4:35 PMI had travelled to Wisconsin to spend time with family. As is typical with our big family, we had several big meals with lots of food - bacon with breakfast, usual selection of sammies at lunch and then pot roast. We skipped the bacon and eggs, went with yogurt and had a cheese sandwich at lunch. We endured being the butt of a few "left coast" jokes (all in good fun) but it also gave us a chance to talk about the EcoChallenge!
