Ryan LaPoma 10/28/2016 9:53 AMNow that we're at our final day of the EcoChallenge, I'm reflecting back on the reasons why I wasn't able to keep my pledge to "eat two meatless meals per day" on 3 out of the 15 days. I don't feel like it was really a lack of commitment to the pledge, it was mostly circumstantial and occurred due to bad planning on my part or when there was social pressure to share a meal (out at a restaurant or when being hosted for dinner). Looking back now, I regret not having used those opportunities to open up a conversation about the importance of my pledge and our meal choices. -

The book is a budget-friendly meal-planning guide that offers an all-natural and easy approach to mealtimes. The idea is that you can use just 20 organic, non-processed ingredients per week to create 5 wholesome, delicious meals that are pretty quick and easy. Check it out! -
