    I'm so impressed by all the activity that I have seen from our NBI EcoChallegne team! Coworkers encouraging others to sign up, talking about their different challenges and experiences. This is what its all about!

    My intention was to go fully vegetarian this year for two weeks but I've had to slightly modify this based on my families menu planning and needs. My modification is that whenever I'm presented with a meal choice, either when eating out or cooking for myself or  family, I will go with a vegetarian option. Even this will be a big shift for me as my default position is to always order a meat dish when dinning out or cooking for myself or family. While this may seem like a step back, I feel this is still in line with the intent of the ecoChallenge. In this season of political campaigning,  I will position this as a necessary compromise...
