    Even though I was tired after work yesterday, I didn't get carryout- instead made a panini with meatless Tofurkey deli meat & warmed up some soup :-) Both frugal and meat-free!

    Last night, I made a delicious vegetarian dish  (as part of my two meatless meals for the day) with chickpeas, coconut milk and lots of warm spices.
