Sara Harding Mihm 10/15/2016 11:03 PMNice, Stanley! Trying a vegetarian diet is an awesome EcoChallenge. If you like trying new recipes from cookbooks, I'd highly recommend anything by Colleen Patrick-Goudreau. Yum yum. Her book, The Vegan Table, changed the way I eat.

This year I will adopt a diet free of animal products, enjoy at least 2 meal(s) cooked with organic ingredients per day, advocate(Matt Mylet) for local and/or organic food options at work or on campus, and finally I will watch a documentary film about food with family and friends and talk about what we learned.
