    I was a vegetarian until I was diagnosed with celiac disease 5 years ago. I am enjoying being meatless for 2 meals a day but surprised how having a restricted diet makes it a little more challenging. It's been great to have this conversation with my family and look for new GF and veggies options.

    Well I'm finding that what I thought would be the hardest task is actually the easiest. Going meatless for one meal is pretty easy and I find myself really thinking about what I'm going to eat instead of being mindless.
