Alondra Pulido 10/18/2016 4:36 PMThe hard part about being vegetarian for me is choosing what to replace with meat. I personally avoid anything vegetarian and I am counting down the days until I can, but today I tried the roasted vegetarian lasagna and it wasn't that bad. #babysteps-
Jennifer Bechtel 10/19/2016 7:41 AMIt's interesting, because people first going vegetarian spend a lot of time looking for meat substitutes. I highly recommend Field Roast brand to give you the heartiness of meat without pretending too much to taste like meat. That said, if you stick it out there will be a time when you stop looking for substitutes, because meat just won't seem like food anymore. Baby steps indeed. Let me know if you want to grab lunch at Field of Greens sometime, and I can make some recommendations. So great that you're making this sacrifice for the EcoChallenge! Way to go!
